Monocultivar TAGGIASCA extra-virgin olive oil
(bottles holding 50 cl. and 1 litre)
cultivar: Taggiasca.
Growing location: inland in western Liguria, at an altitude of 250/400 m. a.s.l.
Harvest period: December - March.
Method of picking: beating down.
Grinding: on the same day as picking.
Grinding system: continuous cold cycle.
Acidity: 0,3% on bottling.
Best served : crude on grilled meat and fish, vegetables.
This is the typical UNFILTERED sweet Ligurian oil, cleansed only of sediment by periodic racking; light can affect the balance of its flavour, so the glass is wrapped in gold foil.
